Vegan Pancake Recipe


No, I'm not vegan but I am beginning to wonder if Orion may have a food allergy. I recently cut egg and dairy out of both of our diets for a two week trial period to see how he responds. Finding baked goods without dairy or eggs essentially means vegan baked goods. In searching for a vegan pancake recipe to make for the entire family I came across this recipe on food.com which I used as the base for my recipe. The pancakes turned out amazing! Much better tasting than any pre-made ones I've tried. Even the rest of my family members who aren't on the restricted diet loved them.

Vegan Pancakes

Makes approximately 15 pancakes

Ingredients

1 3/4 cup organic white flour

3/4 cup whole wheat flour

2 TBSP sugar

1/3 tsp salt

4 TBSP baking powder

2 1/2 cups vanilla flavored coconut milk

5 TBSP canola oil

1) Mix all the dry ingredients in a large bowl (both kinds of flour, baking powder, sugar, salt). Mix well.

2) Add the coconut milk and canola oil to the dry ingredients. Whisk well.

3) Cook just like regular pancakes. In case you haven't cooked pancakes (anyone?): heat large pan to medium high heat. Once thoroughly heated reduce heat to medium. Brush pan with oil to prevent sticking. Use measuring cup to pour small portions of batter into hot skillet. Wait to flip until pancakes are bubbling and edges are starting to firm up. Cook both sides thoroughly. Repeat, repeat, repeat, until all your batter is used. I often have to turn the temperature down even further once I've done a few batches and the skillet has gotten warm.
