Crunchy Breakfast Tacos

I found another yummy recipe in my 29 Minutes to Dinner cookbook by Pampered Chef.

While this is a meatless and allegedly breakfast item I have made it twice for my family for dinner and it was a huge hit. It also only takes about 15 minutes to prepare and the mix of flavors are delicious!

Tacos
1/4 cup chopped fresh cilantro
1 tomato
8 hard taco shells
1 cup shredded mexican cheese (or I used sharp cheddar because that's what I had and it still tasted yummy)
6 eggs (I used 7 for our family of 5)
2 tbsp water
1 tbsp butter
3/4 cup prepared green chili salsa (salsa verde), divided 1/4 and 1/2 cup.

1. Preheat oven to 350 degrees.
2. Chop cilantro and dice tomatoes.
3. Line up tacos in baking dish side by side; fill with half the cheese (or enough to just fill the bottom of each taco). Bake for 5-6 minutes or until cheese melts.
4. As taco shells bake, whisk eggs and water together. Place butter in pan over medium heat 1-3 minutes or until foamy. Add eggs; cook and stir 2-3 minutes until eggs begin to set. Add 1/4 cup green chili salsa; cook 1-2 minutes or until eggs are completely set (don't over cook).
5. To serve, spoon eggs, cheese, cilantro, tomatoes, and desired amount of green chili salsa into taco shells.

Yummy!

this recipe looks awesome. I love the idea of tacos for breakfast. I copied it so I am totally going to try it.

BTW, I just noticed where you are from and I have family that live in the same place as you.

Yum! That sounds like too much work for breakfast, but a perfect dinner! Must add this one to my list of recipes.
